Its the middle of January and I can almost guarantee most people can’t remember what their resolutions were. The effort was there but let’s be real, never eating junk food again and going to the gym for three hours a day is not going to happen to most people. But just in case you are still on the resolution train, or just like to eat healthy occasionally, lettuce wrapped tacos can make you feel better about yourself.

These could definitely still be healthier, take out the cheese if it bothers you, but cheese is delicious and is okay in small doses. Just don’t put on sour cream and you are good to go. I am not taking ownership of the recipe, but I have no idea where I saw it as there as so many variations.

Lettuce Wrapped Tacos

Prep Time: 10 min | Cook Time: 10 min | Servings: Depends on how much ground beef you cook

Ingredients

Ground beef
Cheese, shredded
Tomatoes, diced
Jalapeno, chopped
Ice berg lettuce leaves (big enough to put your taco in)

Directions

  1. Cook the ground beef in a frying pan with your choice of taco seasoning. Meanwhile, cut up the vegetables and shred the cheese.
  2. Put all the stuff into the lettuce and wrap it up the best you can.
