I feel like I am always on some sort of health/fitness obsession. There is always a cool new trend, recipe, class, or food to try. Current kick: protein pancakes. Firstly, who doesn’t love pancakes? And who wouldn’t want to eat them if they were good for you? If you said no, then this post is not for you.

Breakfast is the most important meal of the day but sometimes you just don’t have enough time to prepare and cook an extravagant meal that will cover all of your nutrition needs. When you are running low on time, try to avoid reaching for the cereal box and instead have protein pancakes ready to heat up. Protein pancakes are also good meals for before or after your workout or if you need a quick snack.

I have tried out so many recipes, I couldn’t even name them all; some were good, some not-so-tasty. To make it easier for you I have gathered my absolute favourites for you to try!

Vanilla Oatmeal

Ingredients
1 cup oats
1 cup cottage cheese
3 egg whites
1 scoop vanilla whey protein
1/3 cup almond milk
1 tsp vanilla
1 tsp cinnamon

Mix all ingredients together using a blender for a smoother dough.
Cook over medium heat. Makes about 8 pancakes.

Pumpkin Spice

Ingredients
1/2 cup pumpkin
1/2 cup egg white
1 scoop protein powder
2 tbsp flax
2 tbsp almond flour
1 tsp cinnamon
1/2 tsp nutmeg

Mix all ingredients together, cook over medium heat. Makes about 8 pancakes.

For “icing”: mix together 1 tbsp Greek yogurt with 1 tsp protein powder and enough almond milk to get the consistency you like – I used about 2 tbsp.
Sprinkle with cinnamon.

Double Chocolate

Ingredients
1 mashed banana
1 cup egg whites
2 scoop vanilla whey protein
1/2 cup ground flax seed
1/2 cup almond flour
1/2 cup cocoa powder

Mix all ingredients together, cook over medium heat. Makes about 4 pancakes.
