Everyone has their own classic recipe that they have perfected. Mine is banana bread/muffins. It is the only recipe that I have memorized, which may not seem like much of an accomplishment but I take pride in it. Also, it is the easiest banana bread you will ever make, most of the ingredients are mixed in a blender.
It can be made as bread or muffins depending on your preference. I used to only make it as a loaf of bread until I realized that the cook time gets cut in half when you are using muffin tins.
Blender Banana Muffins
(Recipe adapted from Basic Baking by Evelyn Raab)
1 ¼ cups flour
1 cup granulated sugar
1 tsp baking soda
½ cup vegetable oil
2 over-ripe bananas
- Preheat oven to 350oF
- In a large bowl, stir together flour, sugar, and baking soda
- Put the oil, bananas, and eggs into the blender and blend to a smooth goo. Pour the banana mixture into the flour mixture and stir until thoroughly combined
- Spoon the batter into a well-greased muffin tin and bake for 20-25 minutes or until a toothpick comes out clean.
- Remove from the pan and place on a rack to cool
Makes a dozen muffins.
