Breakfast is the most important meal of the day and most days I eat the usual egg whites and oatmeal but its nice to switch it up and make something a little more tasty. These pancakes are to die for and are still healthy, especially with the added protein icing on top.

Almond Blueberry Pancakes
with Chocolate Protein Icing

Yields about 5 pancakes | Adapted from Skinny Ms’ recipe 


Ingredients (Pancakes)

1 cup almond flour
1 tsp baking powder
3/4 cup almond milk
1 tbsp maple syrup
1 egg

Ingredients (Chocolate Protein Icing)

3-5 tbsp Greek yogurt (plain or vanilla)
1/2 scoop vanilla or chocolate whey protein
1 tsp cocoa powder
2-3 tbsp of chocolate almond milk (depends on the consistency you want)


  1. Mix all ingredients in a bowl until smooth
  2. Use coconut oil to grease a frying pan or skillet, cook until golden or light brown and flip
  3. Icing: mix all the ingredients together, pour on top of pancakes
  4. Add berries on top
