Happy Halloween!

Although pumpkin spice is really a fall flavour, I always feel the mood switch to Christmas after Halloween. Also because we don’t have Thanksgiving between like the Americans, I lose my love for pumpkins on November 1. So what better way to celebrate the holiday than with pumpkin spice waffles?

Pumpkin Spice Waffles

Ingredients

1 cup flour (I used quinoa flour, but almond, whole, rice, etc. would work too)
1/2 tsp baking powder
1/4 tsp baking soda
1 tsp cinnamon
1/2 tsp ground ginger
1 tsp nutmeg
1 egg
1/3 cup almond milk
1/4 cup canned pumpkin puree
1 tbsp brown sugar
2 tbsp coconut oil, melted and cooled (or liquid coconut oil)
1/2 tsp pure vanilla extract
Pure maple syrup

Directions

  1. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, and nutmeg.
  2. In another bowl, gently beat egg. Then blend in milk, pumpkin, brown sugar, coconut oil, and vanilla.
  3. Mix milk mixture into dry ingredients until just incorporated.
  4. Cook waffles in a waffle iron. Serve hot with warm maple syrup.
