I am obsessed with this new brand of pasta that I heard about. Its called Skinny Pasta and its key selling point is that it is high in protein but low in carbs; almost sounds too good to be true. I heard about it through a work client that left her current job and moved over to Skinny Pasta and she had passed along the website to me. Obviously I went out to buy some that day; I just couldn’t resist the protein!

You can use the pasta like you would with regular pasta; I topped it with my favourite homemade tomato sauce. They also have a collection of recipe ideas up on their website. When you are cooking the pasta make sure you do it last, after the sauce is made. The box says it takes 3-4 minutes and they are not joking – it gets soggy really fast, so I would suggest even just cooking it for 2 minutes.

Fresh Tomato Sauce

Ingredients

1 package (250g) skinnypasta™ linguine 
3 cup heirloom cherry tomatoes, chopped
3 tbsp olive oil
3 cloves garlic, mined
1 tbsp dried oregano 
16 fresh basil leaves, torn into pieces
1/4 cup grated parmesan

Directions

  1. Heat 2 tbsp of the olive oil in a large saucepan over medium-low heat. When hot add garlic and cook for about 1 minute.
  2. Stir in tomatoes and bring to a simmer. Cook until sauce begins to thicken, 10-15 minutes.
  3. Meanwhile bring a pot of water to a boil for the pasta, but do not put the pasta in until the sauce is done.
  4. When the sauce is thick enough, add the basil leaves, oregano and the extra olive oil. Leave in pot, turn the heat low or off.
  5. Cook the pasta – literally 2 minutes.
  6. Drain the pasta and stir it into the sauce.
  7. Top with parmasean.
