I was craving pancakes this morning, and had an open carton of coconut milk I had to use up, so these coconut pancakes seemed like the perfect solution. Normally I stick to protein/healthy pancakes but this morning I decided to treat myself and enjoy the coconut sweetness. They are very simple to make, and the toppings are entirely up to you. I used a little bit of maple syrup sprinkled with unsweetened coconut flakes, and added pomegranate seeds for good measure (also I had a lot of them in my fridge). If you wanted to make them Hawaiian themed, adding pieces of pineapple on top would be delicious!

Coconut Flour Pancakes

Ingredients

2 eggs
1 tbsp coconut oil
2 tbsp coconut milk
1/2 cup coconut/almond flour
1 tbsp agave syrup (or maple)
1/4 tsp baking powder

Directions

  1. In a large bowl whisk together eggs, oil, agave and milk until well combined.
  2. In a separate bowl sift flour and baking powder.
  3. Add dry to wet and thoroughly mix until there are no lumps.
  4. Using a ladle, put batter onto a hot skillet. Cook until bubbles begin to form on the top, about 4 minutes, then flip and cook on the second side.

For the icing:

  1. Mix about 1 tbsp of greek yogurt (plain or vanilla) with 1 tsp of vanilla whey protein powder and about 2-3 tbsp of milk, mixed to your consistency liking.
