Banana bread is my go-to baking choice; mostly because I always have a million frozen bananas in my freezer that I need to use. Usually I bake them as muffins because the cook time is shorter and they are easier to bring to work, but when I have the time I like to make a loaf. This time I also wanted to make it into a dessert to serve. My mom actually made it for me the first time in Hawaii with banana bread we had bought at the market there. 

It is not the most aesthetically pleasing dessert (my boyfriend said it looks like baby throw-up) but it is absolutely delicious, and is kind of healthy (bananas and honey as opposed to icing). The topping is also really easy to make, so if you already have banana bread made or you want to buy it, this is a great way to make it more decadent. 

Banana Bread with Honey Nut Topping

Ingredients – Banana Bread

1 ¼ cups flour
1 cup granulated sugar
1 tsp baking soda
½ cup vegetable oil
2 over-ripe bananas
2 eggs

Ingredients – Topping
(per person, so if you are serving to a group multiply the ingredients by that number)

1 regular banana, cut into round pieces
2 tbsp honey or maple syrup
1/4 cup chopped nuts

Directions

  1. Preheat oven to 350oF
  2. In a large bowl, stir together flour, sugar, and baking soda
  3. Put the oil, bananas, and eggs into the blender and blend to a smooth goo. Pour the banana mixture into the flour mixture and stir until thoroughly combined
  4. Spoon the batter into a well-greased loaf pan and bake for 50-60 minutes or until a toothpick comes out clean
  5. Remove from the pan and place on a rack to cool
  6. Heat the honey in a frying pan. Add nuts and banana pieces, mix until it is all coated with the honey. Cook until the bananas are slightly soft.
  7. Place a piece of the banana bread on a plate, pour banana/nut mixture on top. Serve with icecream if desired.
