I don’t think I have ever met a person that doesn’t like grilled cheese. It’s for those times when you can’t really afford meat, or when you are too lazy to make real food, or are just craving some comfort food. Whether you dip it in ketchup or not, everyone has to admit that we wish we could eat grilled cheese everyday.

Sometimes when I try to make myself feel better about eating grilled cheese for a meal I will add things to it that make it a little more fancy. Like this, apple and spinach grilled cheese. Boom. Now you’re getting your fruits and veggies in their too. I put two layers of cheese to keep the spinach and apple contained in the bread. Plus what is wrong with extra cheese?

Apple & Spinach Grilled Cheese

Ingredients

Apple, sliced
Handful of spinach
Havarti cheese, sliced (or whatever cheese you prefer)
1 tbsp butter
2 slices of sourdough bread

I know you know how to make grilled cheese, but just for consistency:

Directions

  1. Butter the top of both pieces of bread. Place one butter-side down in a frying pan on medium-heat. 
  2. Place cheese, spinach, apples, and more cheese on the piece of bread. Cover with the other bread slice, butter-side up.
  3. Cook for about 6-8 minutes then flip over. Cook this side again for 6-8 minutes or until golden brown.
  4. Serve with ketchup (or not.)
