Waffles are my absolute favourite breakfast item (right up there with eggs benedict), but I try to keep the number of times a week I eat them for breakfast at a minimum because they don’t offer that many nutrients. I have always made protein pancakes, so I don’t know why it took me so long to use the same recipe to make waffles!
To make them extra chocolate-y I added dark chocolate chips in there but you could easily use milk chocolate, white chocolate or no chips – whatever you prefer. I sprinkled a little icing sugar on top, more to make it pretty than anything, but you could also put syrup on it for the extra sweetness and moisture. Also, strawberries or other fruit on top is delicious.
The recipe made about 8 waffles for me. I only ate two the day I made them, but I keep them in the freezer and pop them into the toaster oven on mornings when I’m craving waffles.
Double Chocolate Protein Waffles
Mix well. Spray waffle iron before using.
- 1 mashed banana
- 2 scoops chocolate protein powder (can also use vanilla)
- 4 tbsp ground flax
- 4 tbsp cocoa powder
- 1/2 cup almond flour
- 1 cup egg whites
- Mix well. Spray waffle iron before using.
