I have a serious waffle addiction. Every morning I wake up craving them, and every day I look forward to the weekend when I can take a break from my egg whites and indulge in the deliciousness of fruit covered waffles.
I saw the idea for banana bread waffles on Pinterest (where else?) but decided to use my favourite banana bread recipe instead of theirs. It didn’t occur to me before that any dough recipe can be turned into waffles if it’s cooked in a waffle iron. You can add bananas, walnuts, whip cream, icing sugar, or anything you desire on top of these delicious waffles.
I divided my banana bread recipe in half and it made 4 waffles.
Banana Bread Waffles
3/4 cup flour
1/2 cup granulated sugar
1 tsp baking soda
1/4 cup vegetable oil
1 over-ripe banana
- Preheat waffle iron and spray
- In a bowl, stir together flour, sugar, and baking soda
- Put the oil, bananas, and eggs into the blender and blend to a smooth goo. Pour the banana mixture into the flour mixture and stir until thoroughly combined
- Spoon the batter into the waffle iron and cook
- Add desired toppings
