The problem with snacking is that most of the time it’s whatever is lying around, usually something sweet or salty that will tame your cravings. As we all know, being prepared sets you up for success. Having a healthy snack option makes life a little easier, and doesn’t leave you with so much guilt after.

I found the original recipe for these bars in Style at Home, but it’s one of those recipes that you just throw in whatever healthy things you have in the pantry and don’t necessarily need to follow the recipe to a tee. So you’re welcome to add in whatever you like to your own bars, but I’ve listed the ingredients I used. Enjoy!

Homemade Granola Bars

Ingredients 

  • 2 tbsp ground flaxseed mixed with 4 tbsp warm water
  • 1 cup pumpkin puree
  • 2 cups rolled oats
  • 1 cup chopped nuts
  • 1/2 cup dried fruit (I used golden raisins)
  • 1/2 cup hemp hearts
  • 1/4 cup unsweetened coconut
  • 1/2 cup dark chocolate chips

Directions

  1. Preheat the oven to 350oF. Prepare a 9×9″ baking pan with parchment paper or spray it with oil.
  2. Mix all the ingredients together in a large bowl and scrape the mixture into the pan.
  3. Bake for 20 to 25 minutes until the edges begin to brown.
  4. Cut into 12 slices and serve warm.
