It’s been such a long time since I have posted a recipe, I thought I would throw one in just to mix things up (in case you are sick of seeing my face!). Just like when I find a really cute outfit, or a great local brand – when I find a killer recipe I want to share with you guys so you can enjoy the yumminess too!

I received an Oat Box a few weeks ago and I was determined to do more with the granola than just add milk. This led to many o’ photos and recipes being taken on Saturday morning. I basically made up this recipe after reading a few other granola cookie recipes. And it really wasn’t meant to be so chocolatey but the chocolate chips that I added melted when I poured in the sugar and honey mixture (duh Rachel). Anyways, hope you enjoy! Ingredients:

  • 1 1/2 cup apricot granola
  • 1 cup chopped pecans
  • 1/2 cup dark choc chips
  • 3/4 cup palm gar
  • 1/2 cup agave syrup
  • 1/4 cup cashew butter
  • 1 tsp vanilla

Directions:

  1. Line cookie sheet with waxed paper. In large bowl, mix granola, pecans, and chocolate chips.
  2. In 2-quart saucepan, mix palm sugar, agave syrup and cashew butter. Heat to boiling over medium-high heat, stirring constantly. Boil and stir 1 minute. Remove from heat; stir in vanilla.
  3. Pour syrup over granola mixture, stirring until evenly coated. Drop mixture by scant 1/4 cupfuls onto waxed paper. Cool completely, about 30 minutes.
