I had my first Dinner Series last week, inviting my friends over for a home-cooked GK SkinnyPasta meal. We had a great evening, sipping on wine, eating pasta and catching up on the latest gossip and life updates. If you haven’t had SkinnyPasta before, you need to get to the store ASAP (you can find it at Superstore and Co-op in the healthy/organic frozen section). It’s a low carb, high protein alternative to regular pasta, letting you eat guilt free when you’re indulging in your fave pasta dish. I always have some in my freezer because it only takes one minute (no exaggeration) to cook so it’s perfect for last-minute dinners.
GK SkinnyPasta has a great list of recipes on the website to choose from if you’re looking for a little inspiration on how to serve any of the pasta types. I made Butternut Squash Marinara Linguine. The recipe was created by culinary expert Erica von Trapp. The recipe was inspired by her time living in France when she discovered that tomatoes can be surprisingly wonderful when replaced with other fruits or vegetables in dishes. It was really simple to make, the longest part being roasting the butternut squash – so just give yourself enough time for that.
Even though it makes me feel old to be throwing dinner parties, it’s a great way to get your friends together without having to overspend at a restaurant, plus there is no judgment with the number of glasses of wine that are consumed. We had a great time and a fabulous SkinnyPasta meal, I’m looking forward to the next dinner party.
